• 2 1/4 lb. Yukon Gold potatoes
  • 3 whole garlic cloves
  • 1/2 c. soy sour cream
  • 2 Tbsp. soy margarine
  • 1/4 tsp. sea salt
  • chives for garnish

 

  • Step 1

    Steam potatoes and garlic until tender. While potatoes are still hot, mash lightly, then add soy margarine and sour sour cream.

  • Step 2

    Mash until smooth. Add salt to taste. Spoon into serving dish and garnish with chives.
